Cure the Winter Blues


I don't know about you, but I am sick of winter.  I am tired of the cold, the wind, the rain, and the snow.  Don't get me wrong, I love when it snows.  It's beautiful.  It's peaceful. Everything looks as if it is covered with a blanket of pure white when it snows and the world is clean for awhile.  A major snow storm once or twice a week, the shoveling, the ice, and the train delays are another story.  I can't take anymore. This has been the most brutal winter I can remember.

Last week the temperature climbed up into the high 50's! It was wonderful. No chattering teeth and knocking knees while waiting on the train platform.  No gloves or extra long scarf wrapped around my face and neck to prevent frostbite or wind burn were needed. The next day, however, we were back to a chilling 19degrees. We must have pissed off Mother Nature in a big way. What a tease!

I stumbled across this great blog site today by fellow nutritional consultant.  She is lives in Canada.  She really knows a thing or two about rough weather and winter blues.  She also posted a delicious recipe for Coconut Dal that I have to share.  I love dal.  It is an indian soup, made from beans and loaded with exotic, warming spices.  The perfect meal after a day of playing out in the snow or a long, painful commute back and forth to work.  It's fairly simple to make, very nutritious, completely vegan and oh so healing.

OMG! This thing REALLY works for dark undereye circles!

I saw this on TV and thought it was a hoax! No more dark circles or puffy eyes? Come on!!! But.....I bought it on sale yesterday and gave it a try! It is AMAZING!!

Never Feed Your Baby Food from a Jar Again!!

I put it in a food processor, then froze it all in icecube trays. I always had fresh, homemade food on hand--all I had to do was pop a few cubes out of the trays, defrost and heat-- fruit, veggies, sweet potatoes, even chicken! He NEVER ate food from a jar!

Southern Fare With Care- Smoky Beans and Collards

Here's another delicious recipe in my continuing series of Southern Fare with Care.....

Every good Southerner knows what a collard is.  Its a delicious, nutrient-dense, leafy green vegetable.  Collard greens can be overwhelming if you have never tried cooking them before .

A few things about Collards:

Make sure you wash the your collards very well.  I take each individual leaf and wash it.  This can be a bit time-comsuming but trust me, you don't want to be spitting out grit and dirt with every bite.  You might be able to find washed, chopped collards at your market, depending on where you live. Here in NY, I have no choice but to buy them whole and wash and chop them up myself.

Collard stems are super tough and should be thrown out. Even the portion of the stem that runs into the leaf should be trimmed (kitchen shears make this task a snap!) Work with one stalk at a time and hold the stalk by the end of the stem with the leafy portion pointing down. Use a sharp chef’s knife to slice down one side of the stem (the knife is being used like a machete) to strip the leafy green portion away from the stem. Repeat the process on the other side of the stem to strip away the remaining leafy portion. When done, discard the bare stems. The leaves will then be ready to be washed and chopped.

The dish is competely vegan (no animal products at all) and trust me, you won't need the meat or miss it at all! This is perfect to serve for your Meatless Monday Supper. Just add some freshly baked hot corn bread and you are good to go!


Smoky Beans and Collards

• 2 tablespoons extra virgin olive oil
• 1 large Spanish onion, finely chopped
• 4 cloves garlic, crushed
• 2 teaspoons Spanish smoked sweet paprika (pimento dulce)
• 2 celery ribs, finely chopped
• 2 carrots, finely chopped
• 2 cups collards, washed well and cut into bite-sized pieces
• Himalayan sea salt, to taste
• Freshly ground black pepper, to taste
• 2 cups organic vegetable broth (such as Pacific Natural Foods)
• Juice from 1 whole lemon
• 2 cans (15 ounces each) great northern beans (note: look for BPA-free cans such as Organic Eden brand)
If you want this extra smoky, add a few drops of liquid smoke. A good one to try is Wright's All Natural Mesquite Seasoning.


1. Put the oil in a large heavy saucepan set over medium heat. Add the onion and cook 4 to 5 minutes, or until softened. Add the garlic and paprika and stir-fry 2 minutes. Add the celery and carrots; cook for 2-3 minutes, stirring constantly to coat the vegetables in the oil. Add the collards and cook, stirring constantly, until just wilted, about 3 to 4 minutes. Season with salt and pepper to taste.

2. Add the stock, lemon juice and beans to the pot and bring liquid to a boil. Reduce heat and partially cover the pan with a lid. Simmer 15 to 20 minutes minutes, stirring often, until all vegetables are cooked and collards are soft. Season to taste with salt and pepper. Serve warm.

Yes!! You Can Have Chocolate!!

 Here is a delicious, nutritious, easy and guilt-free way to have your chocolate fix-- in a smoothie!!! This recipe yields 4 cups so there is plenty to share with someone you really, really love. Or not! :)





The Sweetie
2 c orange juice (freshly squeezed is best)
1 banana
1/2 c raspberries
1/2 c blueberries
1/2 c guava slices
1/2 c mango slices
1 Tbsp dark cocoa powder

Place all fruit and the cocoa in a blender and mix on high for one minute.  Pour into clear glasses and serve!
